Tour JostVery rarely is there a quiet moment in the vineyards. The 45 acres at Jost Vineyards has only about 2 months of rest during the winter months, otherwise the vines are being pruned, tied, suckered, weeded, trimmed, weeded again, inundated with bird scaring devices, harvested, and in the case of the ice wine, netted, electric fenced, watched and finally harvested. From the vineyard, the grapes get closer to the cellar and are crushed and pressed adjacent to the cellar. Processes differ according to the grapes but all fermentation takes place in the cellar. Filtering, aging, bottling and further aging occurs throughout the cellar. There is always something for the cellar staff to do - never a dull moment - especially around harvest.
